You may have noticed that our recipes editor, Benjamin Kemper launched a new weekly column last week. One Pot Bangers—a recipe series that spotlights easy, one-pan dishes from around the world—kicked off with zippy Neapolitan zucchini scapece. Adapted from its traditional form as a side dish or sandwich stuffer, this scapece is instead a bright and summery sauce for a tangle of weeknight pasta, and as the wave of peak season zucchini rushes in, I can’t get enough of it. Stay tuned for lots more fantastic recipes from Benjamin in your inbox each Saturday.
One Pot Bangers joins our test kitchen manager Fatima’s Khawaja’s farmer’s market driven recipe column, In Good Season, which has been going strong since the spring. Today, Fatima kicks off a whole month of dishes inspired by her recent travels throughout Baja, starting with a special recipe double feature: her own family-friendly watermelon agua fresca, plus a watermelon cocktail from San Jose del Cabo’s Flora Farms.
While you’re enjoying Fatima’s gorgeous, Mexican-inflected food and drinks this month, do also take a moment to read our editor-at-large, Shane Mitchell’s tribute to the late Diana Kennedy. The British-born cookbook author dedicated her life to researching and documenting traditional Mexican foodways and her contributions can’t be overstated. (And if you’re hiding in the AC and looking for something to stream, you might consider Nothing Fancy, the recent award-winning documentary about her life and work.)
