This 30-minute dinner features flavorful pork shoulder chops and nods to one of my favorite cocktails, the dirty martini, with the combination of aromatic gin and briny olives. Pork shoulder chops are thin-cut, usually 3/4 to 1 inch thick, so are quick-cooking and perfect for a weeknight dinner.
