How did Upper Left get its start? Upper Left was founded by Katherine & Jim Harris in 2015. Their family has a long history in the Portland hospitality and service industry and they wanted to create a modern vibrant cafe in the Ladd's Addition neighborhood that would be a central community space in the area.
What’s Upper Left’s roasting style? We focus on sweetness and complexity with our roasts, favoring a lighter profile that allows each origin to really shine - A big emphasis on making the special processes and places that influence the coffee’s flavor pop. I've been roasting coffee in this city for the last 7 years & and think I have found a great balance between what really excites me and what the people of Portland love to drink.
What was the inspiration behind your style and feel as a roaster? Upper Left's cafe in SE Portland kind of influenced what the company has grown into in a lot of ways - it is literally the upper left cornerstone of our neighborhood and is just this awesome, comfortable community hub. So the style is shaped to that need with a really crisp, clean design and flavor that feels uncluttered and easy to spend a lot of time in. The physical style of our cafe and roastery mirrors the food we serve and coffees we roast in a lot of ways: a little minimal, dependable & quality-focused.
How does Upper Left decide on coffee to roast? We look for coffees that really represent the regions and countries they come from, and source from cooperatives, exporters & importers that we've been collaborating with in the industry for years. The intention is to try and get our patrons connected with what we are doing behind the scenes and find coffees that we know we can communicate well. We also love being this small, nimble company that can pursue really wild, experimental lots that you've never tasted before.
How does Upper Left develop tasting notes? We taste our coffees as a team, and brainstorm what we think really fits - it's never as good when it just comes from one person. We want our tasting notes to accurately describe what's in the cup, sound exciting to drink, and not be too unapproachable.
What led to Upper Left’s unique single-origin blends like Abyssinian? We were aiming to create a way to share the variety we see in coffee country-to-country, giving people the ability to find what they love, based on how a place can change what a coffee tastes like. You can really understand what makes each country unique, and then know that you can go back to that same flavor you love 365 days of the year. [Shop Upper Left]
